Other things to consider
All purpose flour
Whole Food organic, 365 brand is amazing all purpose flour. Love King Arthur flour too. I love the brands Grist and Toll and Haden Flour Mills too but they’re flours are a little higher in protein and a little harder to get just right with this recipe. If you use any REALLY freshly milled flour, expect a thicker cookie.
Bread flour or Pastry flour
Organic King Arthur is my preferred brand here for cookies. I appreciate the brands Grist and Toll (milling company in Pasadena) and Haden Flour Mills (in AZ) too but they’re flours require a little more tweaking with this recipe.
Salted Butter
Salted Kerrygold butter or Salted Strauss Butter. The water content for these butters is low which equals a higher quality, more incredible cookie. I always use salted butter in my chocolate chip cookies AND add more salt. Both in the dough and on top!
The flavor of these butters produces a rich dough and helps caramelize the edges making the perfect crispy, caramely cookie.
Crystal Diamond Kosher + Maldon Sea Salt Flakes
The chef and bakers preferred salt. Both of them. We use crystal diamond kosher salt in our dough and maldon sea salt flakes to finish.
TCHO Chocolate Disks
Currently my favorite. Obsessed with the sweet and sassy disks.
Guittard Chocolate Chips & Disks
Love both the chips and disks. I always buy the red bag of chips and always get the red organic bag of disks.
